HOMEMADE MANGO JAM
While Jam is traditionally store bought, this homemade one can rival and store bought Jam, and also is a better option as it is preservatives free and you can adjust the taste and ingredients according to your preference.
Mango- 5 large or 10 medium size
Sugar- 1 cup
Lemon juice- 2 teaspoon
Pectin powder-1 teaspoon
Peel and cut the mangoes into tiny cubes, and blend it without adding any water. (Adding water will water down the mango flavour and increase cooking time)
2) pour the blended mango into a pot place in medium heat and begin stiring, allow only the mango cook for about 10 minutes, add the sugar lemon juice and pectin and continue stiring allow the sugar slowly dissolve into the mango this should take about 10 minutes.
3) After the first 20 minutes of cooking on medium heat and stiring, cover the pot and increase the heat. Allow it boil for about five minutes and then turn off the heat.
Allow to cool for 15 minutes, pour into a glass jar and store in the fridge.
It can be spread on bread, pancake or even doughnuts
